Irish celebrity chef and television personality, head chef and proprietor of the MacNean House and Restaurant (2017 Best Restaurant in Ulster), Blacklion, County Cavan is showing his talents at the Beara Coast Hotel, Castletownbere Wednesday 13th September.

Dublin born, Paul Cartwright, Chef de Cuisine and partner at Roly’s Bistro worked with the great Anton Edelman in the famous Savoy, London for eight years, joining Roly’s Bistro 21 years ago. Cooking at Annie Mays Bar and Restaurant Tuesday 12th September.

Head Chef at Roly’s Bistro Dublin, Hugh trained at Cathal Brugha College, Dublin and has worked with Michael Martin in the Clarence Hotel, Dublin and the two Michelin Star Square Restaurant, London, cooking at Annie May’s Skibbereen, Tuesday 12th September.

Gautham Iyer, is chef-patron at Iyer’s cafe in Cork City. Gautham uses local and foraged ingredients to add a twist to familiar Indian vegetarian classics. Cooking at Good Thing @ Dillon’s Corner on Monday 11th and Budd’s Restaurant Balydehob on Tuesday 12th September.

This conference will discuss the markets and their importance to local food economies, and to find a creative way through the legislation governing them. After lunch the conference attendees will divide into groups to discuss some of the problems regarding the legislation from the perspectives of traders consumers, and regulators. In 1812, life in Allihies on the remote Beara Peninsula changed utterly when a rich copper deposit was discovered which led to the biggest copper mining enterprise in Ireland. The evidence of this industry can be seen all around this picturesque village in the form of the large Cornish engine houses that housed the magnificent steam engines that made the mining possible. These steam engines constantly pumped out water to allow for deeper and deeper mining. They also drove the winding gear and lowered the miners into the depths of the mountains. In a festival exclusive – Allihies Copper Mine will conduct a guided tour of the surface area of the mine and the museum. Visit the impressive engine houses and see the remains of the powder houses and dressing floors. Glimpse into the gaping mouth at the head of the mine that swallowed the miners deep into the earth to recover this valuable element at great human cost. Hear the extraordinary story of exemplary engineering and learn of the hardships suffered by the miners. After the tour the Copper Café will serve two delicious options for lunch either freshly made seafood chowder served with brown soda bread (€20.00 including tour) or open crab sandwich served on brown soda bread with side salad (€24.00 including tour)

Frank Krawczyk, Ireland’s pioneering charcutier will demonstrate the art of meat curing, smoking and preservation in a one day course at Blair’s Cove Restaurant. This course will cover basic pork butchery cuts for use in preservation, curing and smoking techniques, and include a background and history outlining cultural differences in various styles of charcuterie. At the Michael Collins Centre, experience a narrated slide show which tells the story of the Big Fella’s childhood, his family history, his school days, his tragic death and his legacy. The slide show also highlights the important Collins’ sites around Clonakily, and features the 1916 rebellion, War of Independence, Treaty talks and the Civil War. After the presentation visit the life size replica of the ambush site (constructed a the Michael Collins centre) where the events which took place at Beal na Blath that fateful day, and the history of the vehicles in the Collins convoy are explained in more detail. Then return to the cottage theatre to view the exhibitions of photographs, documents and militaria.

On arrival on Cape Clear head to Sean Rua’s Restaurant, meet local historian and archaeologist, Diarmuid Ó Driscéoil, Cape Clear Bird Observatory warden, Sam Bailey and biologist, Dr. Geoff Oliver who will host a guided walk on this unique island. After the walk visitors have two options –Option 1: the more energetic visitors can head up the hill to visit Mara farm, a working island farm, with native Irish breeds of cattle, ponies and pigs, free range ducks, hens and guinea fowl. Enjoy a cup of freshly brewed coffee or tea and a freshly baked scone in the farm shop. After visiting the farm, walk to the Heritage Centre, to meet the walkers from Option 2. Over the centuries, French winemakers developed the concept of terroir after observing the differences in wines produced in different regions, different vineyards, or even from different sections of the same vineyard. Caitlin Ruth, a New Hampshire native, and head chef of the inimitable Deasy’s Restaurant in Ring, will unveil her slow cooked “Clambake” at a spectacular beach feast. As the sun goes down, enjoy a fizzy reception of canapes and some of Caitlin’s lusted after cocktails to sip on as you while away the remains of the day . Fluffy potatoes, fresh seasonal corn and wild Atlantic lobster plus many other delicious goodies will be cooked slowly all day long in a giant sand pit dug in the beach using hot stones, covered in seaweed, revealed then served for your delectation. Sip, slurp, crunch and munch your way through the best local and seasonal ingredients cooked in the most relaxed way possible. A complimentary return shuttle bus is included in the ticket price. Meet at 5.30pm in the outside car park of Scally’s Supervalu and FREE event or shine – will leave at 6pm sharp! Widely regarded as one of Ireland’s finest restaurants, Chapter One is synonymous with Irish gastronomy. The renowned restaurant at The Dublin Writer’s Museum in Parnell Square has held a Michelin Star since 2007. In 2011, Lewis was selected to create the menu and lead the kitchen for the State Banquet for the visit of Queen Elizabeth II to Ireland. In 2017, Chapter One was awarded Restaurant Association of Ireland Best Restaurant in Ireland for the 9th time. In 2015, Lewis opened Osteria Lucio in collaboration with Luciano Tona, serving Italian food in a style of cooking closer to how Ross cooks at home for family and friends. Mews Head Chef, Ahmet Dede, is a former protégé of Lewis, having worked in the kitchens of Chapter One from 2011 to 2014. For one night only, the two chefs will collaborate to create a tasting menu for what promises to be a very special evening.
