SONOMA CHICKEN SALAD SANDWICHES This is such a simple recipe to make for lunch, especially if you just use leftover chicken breast! Make the chicken salad and dressing and store in an airtight container overnight in the fridge. Spread mixture on sandwich bread in the morning to take to work for lunch! Ingredients: 2 cups cooked, shredded chicken ¾ cup diced celery (about 2 stalks) ½ cup chopped toasted pecans ¼ cup dried cranberries, chopped 2 Tbsp finely grated Parmesan cheese Sliced bread (any), for serving
Dressing: ¼ cup low-fat mayonnaise ¼ cup apple juice 1.5 Tbsp honey 1 tsp apple cider vinegar 1 Tbsp poppy seeds ½ tsp onion powder
Directions: 1. In a large mixing bowl toss together shredded chicken, celery, pecans, dried cranberries and Parmesan cheese, set aside. 2. In a separate mixing bowl whisk together all ingredients listed for the dressing until well blended. 3. Pour dressing mixture over chicken mixture and toss to evenly coat. 4. Optional: dress sandwiches with spinach, arugula, sliced tomatoes, cucumber, or any other vegetables as desired. 5. Serve over sliced bread, croissants or rolls. Store in refrigerator. Enjoy!
